Carolina BBQ Sauce
The rib sauce is almost as important as the ribs themselves. This one is a crowd-pleaser. It’s tangy, mustardy, sweet and it is like a golden drop of sun. Its a great sauce for ribs but it can also work well for chicken or for dipping (think french fries).
The Carolinas are known for their different sauces by region. This Carolina BBQ sauce is also sometimes called Carolina Gold. Common BBQ sauces use a ketchup base like Kansas City or Memphis. North Carolina also has a unique vinegar base sauce that tastes great on pulled pork!
This particular sauce is from South Carolina and is a Mustard base. It is balanced out by honey, brown sugar, and vinegar. I like the small addition of ketchup to this recipe because how can you have mustard without a little bit of ketchup? It will seem to be slightly runny compared to a store-bought sauce but don’t worry it is supposed to be that way. Try it out and enjoy it!
